Gregorie Hoppenot produces this lively Chardonnay very close to the Macon region in Burgundy. Gregorie practices organic viticulture and uses minimal intervention in the cellar. The wine is fermented in stainless steel and sees a little wood as well. The lively palate shows lemon butter and cream yet the wine retains nice tension, refreshing the palate with notes of mineral. This is an excellent starter wine and will pair well with the Apéro Course.

The Chapuis brothers, Romain and Jean-Guillaume represent a new wave of winemaking in Burgundy. They started their winery in 2008 and beyond the vineyards they own, they source from like minded growers who practice organic viticulture. In the cellar native yeasts are used and minimal sulfur is added to allow for terroir to shine through. The 2022 Chorey Les Beaune is a very approachable Pinot Noir, showing pretty red cherry fruit with well balanced tannin and acidity. This elegant red will go well with this classic Boeuf Bourguignon.

This is the second label of Chateau de Rieussec located next door to the famous Chateau d'Yquem. This dessert wine shows honeyed apricot fruit and notes of white flowers on the rich vinous palate, but it is not cloyingly sweet. Julie Child had an affinity towards Sauternes and you can see why with their ability to shine with a variety of dessert courses.
