Couly-Dutheil Le Chenin 2023

This historic estate is located in Chinon in the Loire Valley producing excellent Cabernet Franc and a small amount of Chenin Blanc. Father and son team Jacques and Arnaud have extraordinary sites in Chinon and are considered a benchmark producer in the region. The Le Chenin shows pretty aromas of pear and quince and the medium bodied palate delivers honeyed, white peach fruit with a mineral note. This will navigate you through the apero course. 

Diochon Moulin-a-Vent 2023

Moulin-a-Vent is one of the greatest Crus of Beaujolais known for a broader-shoulder style with both depth and nuance yet a softness making them eminently drinkable. Bernard Diochon's Moulin-a-Vent encapsulates this aesthetic. He once said, "I like tannic wines without heaviness; with fruit and floral aromas. I don't like weighty wines with hard tannins." The nose shows aromatics of violet and cherry and the medium bodied palate delivers pomegranate and cherry with a savory iron note and fine tannins. This will pair well with the Chicken Ballotine.

Kopke Dry White Port

Kopke is the oldest Port house in Portugal, founded in 1638. They specialise in Colheita Port which are aged single-harvest tawny port. The sleeper in their portfolio is the Dry White Port. This is a Malvasia Fina based port that is aged for 3 years in neutral wood and stainless steel and is considered dry. However, it has the residual sugar to work with delicate, elegant dessert courses. The wine has aromas of pear and cooked apple and the medium bodied palate delivers notes of honeyed apricot and almonds with a creamy texture. This will pair well with the Poached Pear dessert course and will also work with the cheese course, if added.
